Scientific research on fermented tea drink. Anti-oxidant properties of Tealure teas were studied, and it was found that the fermentation process in kombucha enhances the antioxidant properties of the final product. The highest polyphenol content after 7 days of fermentation was found in the Green Himalayan Pine Tea Kombucha (1283.8 TPC mg GAE/100g) and the Black Summer Muscatel Tea Kombucha (1270.7 TPC mg GAE/100g). Based on these results, we selected three teas for further kombucha production: Summer White (White Tea), Himalayan Pine (Green Tea), and Summer Muscatel (Black Tea).
