White matcha chocolate, made using our Ceremonial Grade Ichigo Ichie Matcha. Due to its high cost, ceremonial grade matcha is rarely used in culinary applications, but we chose this variety precisely because it imparts a vibrant green color to the chocolate and a delicate umami flavor without any bitterness.
In the chocolate-making process, we do not use lecithin, which may lead to the presence of air bubbles and cocoa butter streaks in the bars.
